Stone Brewing is searching for efficient, reliable and passionate Line Cooks to join our Stone Brewing World Bistro & Gardens - Napa team. This role is responsible for accurately and efficiently cooking hot food products as well as preparing and portioning food products prior to cooking. Accurately and efficiently cook meats, fish, vegetables, and other hot food products as well as prepare and portion food products prior to cooking. Also perform other duties in the areas of food and final plate preparation including plating and garnishing of cooked items and preparing appropriate garnishes for all hot menu item plates.

Essential Duties and Responsibilities include the following. Other duties may be assigned.

  • Prepares a variety of meats, seafood, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment. This position is primarily responsible for the fryer, pantry, or cold items with the expectation of being able to fully master one or two stations.
  • Assumes 100% responsibility for quality of products served.
  • Follows recipes correctly.
  • Responsible for checking line and line cooks prep and temping coolers, and food before and or during a shift.
  • Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.
  • Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.
  • Portions food products prior to cooking according to standard portion sizes and recipe specifications.
  • Maintains a clean and sanitary work station area including tables, shelves, grills, broilers, fryers, wok, saut burners, convection oven, flat top range and refrigeration equipment.
  • Follows proper plate presentation and garnish set up for all dishes.
  • Handles, stores and rotates all products properly.
  • Assists in food prep assignments
  • Closes the kitchen properly and follows the closing checklist for kitchen stations. Assists others in closing the kitchen.
  • Attends all scheduled employee meetings and brings suggestions for improvement.
  • Follow all safety policies, procedures and best practices at all times.
  • Other duties, responsibilities and activities may change or be assigned at any time with or without notice.

Qualifications

To perform this job successfully, an individual must be able to perform each essential duty satisfactorily.   • Education: High School Diploma or GED.
  • Experience: At least 2 years of related experience and/or training in high volume kitchen preparation and cooking.
  • Computer Skills: Email
  • Certificates, Licenses, Registrations: Must have a current San Diego County Food Handlers card, issued by the city of San Diego
  • Language Skills: Must be able to effectively communicate in English, both verbally and written.
  • Travel Requirements: Reliable transportation is necessary

Physical Demands

While performing the duties of this job, the employee is regularly required to use hands to finger, handle, or feel; reach with hands and arms; and talk or hear. The employee frequently is required to stand, walk, and sit. The employee is occasionally required to stoop, kneel, crouch, or crawl. The employee must occasionally lift and/or move up to 50 pounds. Specific vision abilities required by this job include close vision, distance vision, color vision, and ability to adjust focus.

Work Environment

While performing the duties of this job, the employee is regularly exposed to fumes or airborne particles. The noise level in the work environment is usually loud.
